12 boned and skinned chicken breasts
1 t. ginger
2 t. ground pepper
1 1/2 C. orange marmalade
1/3 C. apple or orange juice
8 oz. dried apricots
8 oz. currants
1/4 C. brown sugar



Directions:
Directions:
Use two 9 X 13 pans so that the chicken covers the bottom of each. Sprinkle ginger, brown sugar and pepper over breasts. Melt marmalade and spread over breasts. Pour juice over all and put in 350 oven for 20 minutes. Remove and put apricots and currants on chicken. Put back in oven for 40 minutes and baste with pan juices.
