Pate brisee (recipe also in cookbook)
2 large eggs, beaten slightly
1/2 C. flour
1/2 C. firmly packed dark brown sugar
1/2 C. sugar
1 t. vanilla
1/2 C. unsalted butter, melted and cooled
1 C. pecan halves
1 C. semisweet chocolate chips
Whipped cream, as accompaniment

Roll out the pate brisee dough 1/8 inch thick on a lightly floured surface, fit it into a 9 inch pie pan and crimp the edges decoratively. Chill shell for 30 minutes. In a bowl, whisk together the eggs, flour, the sugars, vanilla, butter, pecans and chocolate chips and pour the filling in the shell. Bake at 350 degrees for 35 to 40 minutes, or until the filling is golden and set. Let cool and serve with whipped cream.
