1 C. mashed potatoes
2 C. whole milk, scalded
7 C. flour (or more)
2 pkgs. yeast softened in ˝ C warm water
1 C. butter
1 C. white sugar
1 ˝ t. salt
4 large eggs
1 ˝ pounds brown sugar
cinnamon
chopped nuts (optional)

Combine potatoes, milk and 1 C. flour. Beat until blended. Cool until lukewarm then stir softened yeast into mixture. Cover and let rise until light and bubbly. Cream the butter and sugar, add the salt and eggs. Beat. Stir down the yeast mixture and add along with enough flour to make a firm dough. Knead until elastic (8 – 10 minutes). Place in a bowl, brush with butter, cover and let rise. Punch it down and roll it out on a floured surface as thin as possible; it is easier if you divide the dough into 3 parts instead of rolling it all at once. Spread the dough with soft butter and sprinkle generously with cinnamon and brown sugar, adding nuts if desired. Roll as for a jellyroll and cut into 1 ˝ inch slices. Place in greased aluminum cup and let rise until doubled. Bake at 375 degrees for 18 to 20 minutes.
Glaze:
Cream 1 stick butter, add 2 t. vanilla and 1 ˝ lbs. powdered sugar. Add milk to make a glazing consistency. Have it fairly thick so you can apply it while the rolls are hot. Glaze rolls while warm.
