1 lb raw shrimp any size you can afford (deveined & tailed)
2 Zucchini squashes, sliced on the diagonal
1 large onion sliced
2 large carrots sliced
1 bell pepper sliced in chunks
2 stalks celery sliced on diagonal
1 can sliced water chestnuts
1 can bamboo shoots (if you like them)
1/2 lb sliced mushrooms
1/4 cup soy sauce
2 chicken bouillion cubes
1/2 tsp crushed red chilies
Black pepper to taste
1 pkg fresh Chinese Noodles (uncooked)
1/2 cup cooking oil
1 generous tsp cornstarch

Directions:
Directions:
Cook fresh noodles in boiling water for about three minutes, they need to be al dente' not mushy.
Rinse, drain and toss to coat with 1 or 2 tbs oil, set aside to drain more and dry a little.
Heat large fry pan with 1 tbs oil and add noodles. Flatten out noodle mass and fry on bottom until golden and crisp, slightly browned in spots (this takes a little while, be patient...Eli was a master at this). Turn and do same for other side.

Saute shrimp in butter and crushed chilies and set aside.

Stir fry all the veggies, add sauted shrimp at last.

Heat 2 cups water to boiling and add bouillion cubes.
Add 2 tbs soy sauce.
Mix cornstarch with water until runny and add to bouillion.
Add liquid mix to wok with shrimp & veggies and stir until sauce thickens.

Break noodle mass up in serving sized portions (or cook them that way to begin with) put on plate and top with stir fry mixture.

This can be made with beef, pork or just the veggies.

Sprinkle soy sauce and eat with chopsticks.
