Pork - chops or loin
1 tsp garlic powder
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
2 jalapeņos peppers, halved, seeded and stemmed
2 TBSP pork dripping or bacon grease
2 TBSP all purpose flour
1-2 cups of milk

Directions:

Combine garlic powder, paprika, salt and pepper in a bowl. Prepare you meat and rub with this mixture. Cook pork as you would normally.

Lightly brush jalapeņo halves with oil. Grill or bake until soft and slightly charred. Cool slightly; finely chop.

For Gravy, heat drippings or grease in a skillet. Once hot (not too hot) add in flour stirring constantly. While cooking the floor you can add some salt and pepper. Once the flour is brown stir in 1 cup of milk. Stir with whisk constantly until starts to thicken. You can add the remainder of the milk until gravy has a good consistency. Add in the diced jalapeņos and let cook a few minutes longer.

Pour gravy over pork and serve

This is dish is great with mashed potatoes and corn. I personally like to use pork chops and bake them wrapped in foil. I open the foil up the last 5 minutes to brown the top. Enjoy!
