Dressing
1 cup Creamy Cucumber Dressing
1 cup mashed avocado

Layered Salad
1 lb spinach pieces
1 (9 oz) frozen artichoke (cook/drained)
1/4 lb Monterey Jack
2 tomatoes wedged
1/4 lb mushrooms
1/4 lb cooked ham
3 hard boiled eggs sliced

Directions:
Directions:
In medium bowl, blend creamy cucumber dressing with avocado. In 3 qt salad bowl layer 1/2 spinach, artichokes, cheese, tomatoes, mushrooms, ham, eggs and remaining spinach. Spoon dressing over salad. Cover and chill several hours or overnight. Garnish, is desired, with whole pimentos, cut into star shapes. Makes 4 servings.
