5 cups 3/4 to 1-inch cubed seeded watermelon
1 cup chopped green onion
3 Tbs chopped fresh mint
3 Tbs chopped fresh Italian parsley
1 1/2 Tbs finely chopped seeded jalapeņo chili
1/4 cup olive oil
2 Tbs champagne vinegar

Directions:
Directions:
Combine watermelon, green onions, mint, parsley, and chills in a large bowl.

Whisk oil and vinegar in a small bowl. Pour dressing over watermelon mixture; toss to coat. Season salad generously with salt and pepper, serve immediately.
