3 cups cubed whole wheat bread
7 1/2 cups cubed white bread
2 pound Jimmy Dean Sage Sausage
2 cup chopped onion
1 1/2 cup chopped celery
6 teaspoons chopped fresh sage
3 teaspoons chopped fresh rosemary
1 teaspoon fresh thyme
2 Granny Smith, Braeburn or Fuji apples, cored and chopped
1 1/2 cups craisins
1 cooked turkey liver, finely chopped
4 cups turkey or chicken stock
8 tablespoons unsalted butter, melted
1 cup chopped salted and roasted pecans

1. Preheat oven to 350 degrees. Spread the white and whole wheat bread cubes in a single layer on a large baking sheet. Bake for 5 to 7 minutes, or until evenly toasted. Transfer bread cubes to a large bowl.
2. In a large skillet, cook the sausage and onions over medium heat, stirring and breaking up the lumps until evenly browned. Add the celery, sage, rosemary, and thyme; cook, stirring for 2 minutes to blend flavors.
3. Pour sausage mixture over bread in bowl. Mix in apples, pecans craisins, and liver. Drizzle with turkey stock and melted butter, and mix lightly. Place on jelly roll pans and cover with foil. Bake at 350 degrees for 30 minutes, uncover and stir and place back in the oven for 15 more minutes.

Can change the bread to whatever type you would like. If you want to use dried herbs cut the amount in half. Well worth the work and not many leftovers. Can cut the recipe in half if you would like.
