1-1/2c. sugar
1/3c. cornstarch
1/8t. salt
1-1/2c. water
4T. strained lemon juice
3T. butte
3 egg yolks slightly beaten (save whites for meringue)
1-1/3T. grated lemon rind

Directions:
Directions:
Cook all the above and pour in baked pie shell. Top with meringue: 3-4 egg whites, 1/2t. cream of tartar, 1/4c. plus 2T. sugar. Whip egg whites until frothy. Add sugar 2T. at time. Beat until peaks form. Put back in oven and bake at 350º watching it carefully while it is browning.
