1d. hot water
1/2c. butter
1T. sugar
1/2t. salt
1c. sifted flour
4 eggs
1t. grated orange
1t. lemon peel

Directions:
Directions:
Bring to boil water, butter, sugar, salt. Add all at once 1c. sifted flour. Beat vigorously with wooden spoon until mixture leaves sides of pan. Remove from heat and quickly beat in the 4 eggs, one at a time. Continue beating until smooth and glossy. Add 1t. grated orange and lemon peel. Spoon onto greased cookie sheet in very large tablespoon. Bake 450º for 15 minutes then lower heat to 350º for 15-20 minutes. Remove from heat and cool a few minutes before removing from cookie sheet. These, of course puff up in baking. After cooling, you can cut them in half and fill them with homemade custard or flavored whipping cream or instant puddings.
