1 box frozen chopped spinach, thawed & drained
1/2 c ricotta
4 oz softened cream cheese
1/4 c parmesan cheese
1 T fresh lemon or lime juice
1 t garlic powder
1 t salt
1 t pepper
package of wonton wrappers
oil for deep frying

Directions:

Mix filling ingredients thoroughly. Place 2 teaspoonfuls of filling in the center of wonton wrapper. Fold into a triangle and seal the edges with water. Join the points of the flat side of the triangle together and seal with water to form a wonton shape. Deep fry at 375º for just a couple of minutes, turning often to lightly brown. Serve with Greek tzatziki or marinara (both recipes in Sauces).
