Ingredients: 3/4 cup sugar 1 tsp. ground cinnamon 1/2 tsp. salt 1/2 tsp. ground ginger 1/4 tsp. ground cloves 2 large eggs 1 can (15 oz.) Libby's 100% Pure Pumpkin 1 can (12 fl. 0z.) Nestle Carnation Evaporated Milk 1/4 cup to 1/3 cup molasses 1 unbaked 9-inch deep-dish pie shell Cool Whip

Directions:Blend pumpkin and eggs then mix in all dry ingredients. Gently stir in milk. Add in a small amount of molasses and combine. Add more for a richer flavor. A good rule of thumb is to add the molasses until you see the mixture darken a little. We prefer a generous amount of molasses. Then pour into pie shell with cookie sheet underneath. Pie shell will be completely full and the cookie sheet will act as a catcher for spillage. Without the cookie sheet the mixture may spill over and burn on the bottom of your oven. Bake in 425 F oven for 15 minutes on bottom rack. Reduce temperature to 350 F and bake for an additional 40 to 50 minutes or until knife inserted in center comes out clean. Cool on wire rack. Serve with Cool Whip on top. |
