3/4 cup sugar
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. ground ginger
1/4 tsp. ground cloves
2 large eggs
1 can (15 oz.) Libby's 100% Pure Pumpkin
1 can (12 fl. 0z.) Nestle Carnation Evaporated Milk
1/4 cup to 1/3 cup molasses
1 unbaked 9-inch deep-dish pie shell

Blend pumpkin and eggs then mix in all dry ingredients. Gently stir in milk. Add in a small amount of molasses and combine. Add more for a richer flavor. A good rule of thumb is to add the molasses until you see the mixture darken a little. We prefer a generous amount of molasses.
Then pour into pie shell with cookie sheet underneath. Pie shell will be completely full and the cookie sheet will act as a catcher for spillage. Without the cookie sheet the mixture may spill over and burn on the bottom of your oven.
Bake in 425 F oven for 15 minutes on bottom rack. Reduce temperature to 350 F and bake for an additional 40 to 50 minutes or until knife inserted in center comes out clean. Cool on wire rack. Serve with Cool Whip on top.

My mother is an incredible baker whom I owe all my knowledge to. For as long as I can remember my mother would often be baking in the kitchen. As an adult asking her for recipes, I discovered she can be tricky when giving these out. She sometimes will "omit" her secret ingredients; you have to watch her!
