1/2 cup cold water
2 tbsp cornstarch
1 1/2 cup hot water
1 1/4 cup sugar
3 eggs beaten slightly
1 lemon (rind and juice)
1 tbsp butter

Meringue
3 egg whites
6 tbsp sugar
1 tsp lemon juice

Directions:
Directions:
Mix cold water and cornstarch to a thin paste. Combine hot water and sugar in double boiler and bring to a boil over direct heat. Add cornstarch paste and cook until thickened, return to double boiler for 15 mins, stirring occasionally Stir a small amount of mixture into egg yolk, return to double boiler for a few minutes longer. Add lemon rind, juice and butter. Blend. Cool before putting into baked pie shell. Top with meringue. Bake at 325º for 20 minutes
