3/4 cup sugar
1 tsp cinnamon
4 tbsp cornstarch
1/8 tsp salt
2 cups cooked unsweetened rhubarb & juice
1 tbsp grated orange rind
3 eggs
3 tbsp orange marmalade

Directions:
Directions:
Combine sugar, cinnamon, cornstarch and salt. Add to rhubarb cook about 10 min or until thickened, stirring constantly. Add orange rind and beaten egg yolks. Cook 2 minutes longer, stirring constantly. Cool, pour into baked pastry shell. Beat egg white until stick and dry, fold in orange marmalade. Pile lightly on pie and brown.
