2-3 chunked apples, I use Rosalyns or Fugi's
2 chunked oranges or 3-4 mandarins sectioned
20 oz. drained pineapple chunks
1-2 cups halved grapes
2-3 bananas cubed
1/2 cup broken pecans
Marachino cherries for color

Dressing:
Reserved Pineapple juice--1/2 to 3/4 cup
2 tbs corn starch
1 tbs sugar
1 egg
1 tbs butter
1 tbs vanilla

Directions:
Directions:
Mix fruits and nuts together.
For dressing: combine and microwave or stove top till thick, the reserved juice, corn starch, sugar. Cool some, then add 1 beaten egg, 1 tbs butter and vanilla. Cool completely before adding to a couple cups of stiffly whipped cream. Can use Cool Whip, we prefer cream. Fold into fruit mixture, gradually to desired consistency. Add the Marachino cherries on top. Best eaten the first day.

This fruit salad came from Aunt Beth and Aunt Maurine I think, but was always on Mom's holiday table, and remains on ours today. I think Aunt Beth added miniature marshmallows. We love the fresh fruit, even though we have these fruits year round now. It is still a festive great salad. With fresh pineapple available it might work better, and Kiwi's would be a bright addition.
