2 cups chopped, nuts--pecans are best
2 cups flaked coconut
1 1/2 cup light raisins
1/2 cup snipped figs
1/2 cup chopped dates
1 cup snipped dried apricots
2-8oz. pkg candied pineapple
1- 1/2 8oz. pkg candied cherries
1/2 cup flour
Mix above ingredients together.

Next ingredients:
1 1/4 c. shortening,butter
or oleo
1 1/2 cup sugar
7 eggs
1 1/2 tsp rum extract
2 1/4 tsp baking powder
1 tsp salt
3/4 cup orange juice

Directions:
Directions:
Cream shortening and sugar, stir in eggs and extract. Combine dry ingredients. Stir in shortening mixture and fruit mixture alternately ending with the orange juice.

Grease and flour pans. Bake at 275 degrees for 1 1/2-3 hours depending on pan size. Makes 3 loaf pans or 8-9 mini loaves. My most recent cookbook has a very similar recipe and say 300 degrees for 50-60 min or 70 min for larger pans. You can store in airtight in fridge for at least a week or wrap in brandy or wine or juice soaked cloth and foil for about 4 weeks to ripen.

Not many folks appreciate fruit cake these days. Mom's was lighter and no citron. I made it until recent years, the only one my family care for. One of my daughters still does it.One of my moms' recipes that I have.
