24 flour tortillas
1 1/2 to 2 pounds ground beef
1 package taco seasoning mix
1 16-ounce can tomato sauce
2 packages enchilada sauce mix
24 ounces water
2 cups shredded cheese
8 ounces Velveeta

Directions:
Directions:
Preheat oven to 375º.

Brown ground beef. While browning add 1 package of taco seasoning mix. Then set aside.

In sauce pan add water, tomato sauce and enchilada mix bring to boil. Turn off heat. Scoop just enough sauce into two rectangular cake pans to cover bottom.

Warm tortillas up for 1 minute in microwave to soften, then add a scoop of ground beef and a scoop of shredded cheese. Roll up tortilla, place in pan. Continue the process until pan is full. Pour 1/2 of remaining sauce over tortillas.

With remaining sauce add your Velveeta, heat till fully melted, then pour in strips over tortillas. Lightly sprinkle remaining shredded cheese on top. Bake for 15 minutes.
