1 large cauliflower
1 small/medium yellow onion
2 cups chicken or vegetable stock
2T olive oil
salt (to taste)
pepper (to taste)
spices-thyme,ground cumin,etc...(optional)

Directions:
Directions:
Dice onion. Put onion and olive oil in medium soup pan and saute' for 2 minutes. Cut cauliflower florets and tender parts of the stalk into small pieces. Add to onions and saute' TTL cauliflower is tender ( i like it to be a little brown..). Add stock,salt and pepper and spices and bring to a boil. Turn heat down to low/med and simmer for another 20-30 minutes. Blend with hand mixer in soup pan to get a nice creamy texture. Great with a dollop of sour cream

This is the easiest and freshest soup I've ever made and usually get tons of compliments. You can do roasted butternut squash the same way.,,
