2 large garlic cloves, peeled
1 jar(7oz) sun-dried tomatoes in oil,undrained
3 cans chicken broth (5-1/4c)
1 lb uncooked penne pasta
1 head broccoli (2 c. small florets)
2 medium carrots, peeled
4 oz cream cheese

Directions:
-Thinly slice garlic into stockpot, with 1 tbsp oil from sun-dried tomatoes. Cook over medium heat for 2-3mn or until garlic golden brown.
-Remove pan from heat & add chicken broth. Return to heat, cover & bring to a boil.
Stir in pasta, cover & simmer vigorously 8-10mn or until pasta is almost cooked, but still firm, stirring occasionally
-Meanwhile, cut broccoli into small florets, & slice carrots into thin slices. Drain sun-dried tomatoes,pat dry with paper towel. Slice tomatoes into thin slices.
-Cut cream cheese into cubes, Add veggies, cream cheese, salt & pepper to stock pot when pasta almost cooked
-Stir until cream cheese is melted and mixed in well.
-Reduce heat to medium, cover & cook for an additional 2-4 mn until veggies are tender.

Can add sliced turkey or chicken breast for a heartier version.
May substitute 2 c halved cherry tomatoes for sun-dried tomatoes.
When I make this I omit the garlic & add chicken breasts. MMMMMM-nummy!
