1 lb. box Fettuccine noodles
4 Tbs. butter
1 Tbs. olive oil
2 Tbs. flour (level)
1/4 tsp. salt
1/4 tsp. coarse ground black pepper
3/4 tsp. Garlic powder
1/2 tsp. Onion powder
1 Tbs. parsley flakes
3 Cups Heavy whipping cream
1 Cup 2% milk or Half and Half
3/4 Cup shredded mild cheddar cheese
3/4 Cup shredded or flaked Parmesan cheese

Start salted pasta water boiling since sauce does not take very long.
Melt Butter and olive oil in sauce pan. Add 2 level Tbs. flour to make rue. Totally mix together over low heat. Add salt ground pepper, garlic powder, onion powder and parsley flakes.
In Saucepan heat Heavy cream and milk (or half and half). Stirring constantly over medium heat.
Add cheddar and Parmesan cheese (if using grated Parmesan cheese, use only 1/3 cup)
Stir constantly until boiling for a few minutes. Sauce is done and will thicken as it cools.
Add cooked shrimp or cooked chicken strips if desired and serve over hot pasta.
