1/4 cup light Italian dressing
1 pound boneless skinless chicken breasts, cut into strips
1 1/2 cups fat free, reduced sodium, chicken broth
2 cups instant rice, uncooked
4 ounces low fat cream cheese or cooking cream cheese
1 8-ounce package baby spinach leaves
1 large tomato, chopped
2 tablespoons grated Parmesan cheese

Heat dressing in a large deep skillet on medium-high heat. Add chicken then cook for 3 to 5 minutes. Stir in broth then bring to boil. Add rice then stir. Return to boil and cover. Simmer on medium heat for 5 minutes.

Add cream cheese then cook for 2 to 3 minutes or until melted, stirring frequently. Add spinach. At this point the pan will be full. Cover and cook for 1 minute or until spinach is wilted. Stir gently to mix in the spinach.

Remove pan from heat. Let stand, covered, for 5 minutes. Top with tomatoes and Parmesan cheese.
