1/2 c. creamy peanut butter
4 tbsp. butter, room temperature
1 c. packed light brown sugar
2 large eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/3 c. sugar, forl rolling dough
36 mini peanut butter cups, chilled and unwrapped

Directions:
Directions:
1. Preheat oven to 350º.
2. Cream together peanut butter and butter until smooth.
3. Add brown sugar, beat until combined.
4. Add eggs and vanilla.
5. In a small bowl, whisk together flour, baking pweder and salt.
6. Gradually add flour to cream mixture.
7. Scoop dough by the tablespoon and roll into balls.
8. Roll balls in sugar, coating completely.
9. Place 2 inches apart on cookie sheet.
10. Bake until cookies begin to puff up slightly, approximately 7 minutes, and remove from oven.
11. Press one peanut butter cup in center of each cookie.
12 Return to oven and continue cooking approximately 6 more minutes, until cookies are golden brown.
13. Cool at least 10 minutes on cookie sheet.
