1 lb. extra sharp cheddar cheese, grated
1 cup chopped onions
1 cup chopped pecans
6 twists freshly ground black pepper
dash of cayenne pepper
1 cup mayonnaise

1 - 12 oz. jar of seedless jam, red raspberry or strawberry

Directions:
Directions:
In large bowl, combine cheese, chopped onion, chopped pecans, pepper and cayenne. Mix thoroughly. Add mayonnaise and, again, mix thoroughly.

Press mixture into a 3 cup mold. I line the mold with saran wrap for easy removal. Refrigerate at least 2 hours. (Aging for 24 hours enhances flavor.)

Remove the cheese from the mold onto a serving plate. Top with jam to run down the sides.

Great for spreading on crackers.

I often divide the amount into two containers. If you don't have a mold, a bowl works just fine!
