2 T. shredded cheddar cheese

Coat 12 oz. microwave-safe coffee mug with cooking spray. Add eggs and milk. Beat with a fork until blended. Microwave on high 45 seconds. Stir. Microwave until eggs are almost set, about 30-45 seconds longer. Top with cheese, season with salt and pepper.

You might need to put a small saucer over the top of the cup in case the egg pops. It hasn't for me tho. Eat right out of the cup. Put cup in dishwasher when finished. No mess and quick!
