1 can black eyed peas
1 can white whole kernel corn
1 can pinto beans small can chopped green chiles

2 chopped stalks celery
1 small onion
1 red bell pepper
2-3 chopped tomatoes

1/2 cup sugar
1/2 cup oil (I use olive oil)
1/2 cup vinegar
1 tsp. salt
1 tsp. pepper

Directions:
Directions:
Drain and rinse first 5 ingredients and put in large bowl. Then add next 4 ingredients. Boil the sugar, oil, vinegar, salt and pepper for 30 seconds in microwave or pan. Cool completely and pour over the other ingredients. Chill overnight. Serve with Frito Scoopsl

I like to put this dip on top of a spinach salad and forget the Fritos! It makes a whole meal.
