1 package lemon-flavored Jello
1 cup boiling water
1/2 cup ice water
1 - 9 ounce can crushed pineapple
pinch of salt
2 medium-sized carrots, grated

Directions:
Directions:
Empty the Jello in a small mixing bowl. Stir in the boiling water. Stir thoroughly until gelatin is entirely dissolved. Then stir in ice water, pineapple, and a pinch of salt. Chill in refrigerator. When gelatin starts to thicken, add the grated carrots. Pour into an 8-inch square pan and chill in refrigerator until firm. Cut in squares and serve on crisp lettuce leaves with a dollop of mayonnaise if desired.
