2 cups sugar
1 stick margarine
2 cups flour
1 t. soda
1/2 cup crisco
1/4 t. salt
1 cup buttermilk
2 cups coconut
5 eggs
1 t. vanilla
1 cup pecans

Icing:
1 1/2 stick butter
12 oz. cream cheese (room temperature)
1 1/2 box powdered sugar
1 1/2 t. vanilla

Directions:
Directions:
Cream sugar, margarine and crisco until fluffy. Add salt, egg yolks one at a time. Add alternately flour and milk. Fold in egg whites stiffly beaten. Add coconut, vanilla and pecans. Bake 350º for about 50 minutes. Let cool 10 minutes before icing.

Beat icing ingredients until fluffy and ice cake. Keep cake in refrigerator.
