12 medium potatoes or 3 to 4 lbs (Russet Potatoes)
1 T salt
1 T sugar
1 c cream or half & half
1/4 c butter

Directions:
Directions:
Boil potatoes w/o salt. Rice potatoes - should have 8 c. riced. Sprinkle w/salt & sugar. Heat cream & butter till butter has melted. Add to potatoes & mix well. Set aside to cool. Measure 2 c. potatoes & add 3/4 c. flour & mix. Should make 8 to 10 balls out of each 2 c. mixture. Keep covered so they don't dry out. Roll out & brown on griddle.
They will look like tortillas. Serve warm buttered & sprinkled with sugar.

Because I make these in the winter I set the mixture outdoors to cool faster. Should just be warm to the touch before adding the flour. Will need to use some flour when you roll them out.
