3 tblsp. olive oil
3 tblsp. apricot preserves
1 1/2 tblsp. white wine vinegar
2 1/4 tsp. dijon mustard
2 1/4 tsp. curry powder
1 1/4 tsp minced garlic
1 1/2 lbs. uncooked shrimp, peeled and deveined
skewers

Directions:

Mix together the first 6 ingredients in a large bowl. Add shrimp and toss to coat. Cover and refrigerate for at least 2 hrs.

Thread shrimp on skewers and grill or broil 3 minutes each side.
