4 bacon strips diced
4 bratwurst, cut into 2" pieces
1 medium tart apple, chopped
1 medium onion, chopped
1/2 c cider vinegar
3 tbsp brown sugar
1 tbsp spicy brown mustard
1/2 tsp salt
1/8 tsp pepper
4 c frozen cubed hash browns, thawed
1 can Bavarian style sauerkraut, drained

Directions:
Directions:
In skillet over medium heat, cook bacon until crisp. Remove and drain. In the drippings, cook and stir brats for 10-12 mn. Remove from pan with slotted spoon. Drain pan, reserving 2 tbsp of drippings.
Saute apples and onions in the drippings until slightly browned. Add vinegar, brown sugar,mustard, salt & pepper, and the brats.Cover & cook for 12 mn until brats are no longer pink & a meat thermometer reads 160º, stirring frequently.
Add potatoes and sauerkraut: cook & stir until heated through. Sprinkle with bacon and serve.
