1 c chopped onion
1 c butter,cubed
2 pkg (8.5 oz each) cornbread/muffin mix
2 c (8 oz) shredded cheddar/Monterey jack cheese
6 eggs
1 1/2 c cottage cheese
1 pkg (9 oz) frozen broccoli cuts, thawed and drained
1 c fresh or frozen corn, thawed
2 Tbsp canned jalapeño slices, chopped

Directions:
Directions:
In large skillet saute' onion in butter until tender; set aside. In a large bowl, combine cornbread mix and shredded cheese. In another bowl, beat the eggs, cottage cheese and onion/butter. Stir into corn mixture until moistened. Fold in the broccoli and jalapeño. Pour into a greased 13x9x2 pan. Bake at 400º, 35-40 minutes or until brown and edges pull away from sides of pan. Enjoy!
