20 graham crackers, finely crushed
1c. chopped walnuts
1/2t. cinnamon
1/2t. salt
1/2t. baking powder
1/2c. shortening, softened
1/4c. sugar
4 eggs separated
1/2c. milk
3c. heavy cream
2T. confectioner's sugar
1 jar apricot preserves - med to large jar for spreading on top of torte layers
Walnuts for garnish

Combine cracker crumbs with chopped walnuts, cinnamon, salt and baking powder. Cream shortening. Gradually add sugar, beating until light and fluffy. Add egg yolks; blend well. Alternately add crumb mixture and milk to egg mixture. Beat egg whites until stiff but not dry. Fold into batter. Spoon batter into (4) 8" cake pans lined with wax paper. Bake at 325º for 20 minutes. Remove layers from pans and cool on racks. Whip cream with confectioner's sugar. Spread each layer with apricot preserves and whipped cream. Stack layers and garnish with walnut halves. Chill 4 hours before serving.
