1 1/2 pounds ground beef
2 T. butter or cooking oil
1 package Italian-style spaghetti sauce mix (French's brand preferred)
1 can (6 oz.) tomato paste
1 pound small-curd cottage cheese
1/2 pound lasagna noodles
2 tsp. basil
1 T parsley flakes
1 tsp. salt
1 can (1 pound) tomatoes, cut up
1 can (8 ounces) tomatoes sauce
1 cup water
8 ounces mozzarella, shredded or sliced

Directions:

Brown ground beef in butter or cooking oil and drain. Mix half of dry spaghetti sauce mix and half of tomato paste with ground beef and press in bottom of 9X13 inch glass dish. Cover meat with cottage cheese, then lay dry, uncooked noodles over the top. Spoon remaining tomato paste over noodles, then sprinkle the rest of the spaghetti sauce mix over that, followed by basil, parsley, and salt.
Spoon on cut-up tomatoes: pour on tomato sauce and water, cover with foil and bake in a 375º oven for 30 minutes. Remove foil and bake another 30 minutes.
Top with mozzarella and let stand 5 minutes before serving.
The lasagna also can be cooked in an electric skillet. Bring the assembled casserole to a boil, cover and reduce heat to simmer 35 minutes.
