1 c. sugar
2/3 c. pumpkin
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. ginger
1/2 tsp. salt
1 c. powdered sugar
8 oz. cream cheese
4 T. butter
1/2 tsp. vanilla

Beat 3 eggs on high for 5 min; gradually beat in 1 c. sugar. Stir in 2/3 c. pumpkin, 1 tsp. lemon juice, Stir together in a separate bowl 3/4 c. flour, 1 tsp. baking powder, 2 tsp. cinnamon, 1 tsp. ginger, 1/2 tsp. nutmeg, 1/2 tsp. salt. Fold into pumpkin mixture.
Spread in a greased and floured 15x10x1 pan. Bake at 375º for 15 min. Turn out on a thin dish towel sprinkled with powdered sugar. Starting at narrow end, roll towel and cake together. Cool and unroll.
Filling: Mix 1 c. powdered sugar, 8 oz. cream cheese, 4 T. butter and 1/2 tsp. vanilla. Beat until smooth; spread over cake and roll. Chill or freeze.
