Nut & Poppy Seed Rolls----Babka's Recipe

Ingredients: 8 c. flour {pre-sifted} 1 c. sugar 1/2 t. salt 1 yeast cake {small} size 1/2 qt. milk 1/2 pound of butter 12 egg yolks {beaten}

Directions:Have everything room temperature. Mix sugar, salt, yeast with 1/3 cup of flour. Set aside. Warm milk and butter. Mix the two preparations together for 2 minutes. Add more flour and egg yolks. Beat 2 more minutes. Then knead till elastic and let rise for 2 hours in warm place. Roll thin. Spread with nut mixture or poppy seed mixture.
Nut mixture: 3 1/2 lbs. walnuts crushed 1/2 glass honey 2 T. sugar 1 T. butter warm mixture----or use crushed nuts mixed with egg white {beaten} and warm milk Poppy Seed filling: Poppy seed {crushed} 2 T. sugar or enough to taste 1 T. butter Mix with warm milk
After rolls are filled, brush with egg white {beaten} and bake in 325 degree oven till golden brown. About 25 to 30 minutes

Notes: The honey in the nut mixture is my Mom's recipe. Babka's friend, Mrs. Leroy, used 6 eggs instead of 12 egg yolks.
