1 1/2 lbs. ground beef
1/2 medium onion, chopped
1 clove garlic, finely minced
1 cup bread crumbs
1 Tbsp. chopped parsley
1/2 lb. Mozzarella cheese, grated
1 tsp. salt
1/4 tsp. pepper
2 eggs, slightly beaten
1/2 cup milk (add more if mixture seems too dry
1 lg. jar spaghetti sauce (4 cups)
1 (8 oz.) box Manicotti macaroni

Directions:
Directions:
Saute beef, onion and garlic. Drain off excess fat and cool mixture. Add remaining ingredients except sauce to meat mixture. Cook Manicotti according to directions on box. Stuff cooled macaroni with meat mixture. Place filled shells in single layer in a greased baking dish. Pour 2 cups of sauce over stuffed shells; cover and bake 25-35 minutes at 350º. Before serving, add rest of sauce (heated) and sprinkle with Parmesan cheese. 2 stuffed shells with sauce is considered a generous helping for 1 person.
