4-6 cups cooked white or brown rice (Basmati is delicious with the curry)
2 large cans diced tomato
1 cup frozen peas
3 Tbsp. or more good curry powder, to taste
1/2-1 tsp. onion powder, to taste
ground black pepper, to taste
3 cups cooked shrimp, chicken, fish, or a mixture of all three

In a medium pot, place tomato, peas, and seasonings. Mix well and bring just to a boil. Reduce heat immediately to a simmer. Add meat and heat through, about 5 minutes. Serve over rice.
