1/4 c. butter or margarine
1/4 c. flour
3 c. chicken broth
1 c. milk
8 oz. Velveeta Cheese - cubed
10 oz. can Rotel
2 c. cooked, shredded chicken (I roast bone-in, skin-on chicken breasts)
1 tsp. cumin
1 tsp. chili powder
salt and pepper to taste
flour tortillas
shredded mexican cheese

Directions:
Melt butter in stock pot over medium heat. Stir in flour and cook stirring often for 3 minutes. Slowly whisk in small amounts of chicken broth, then whisk in milk. Reduce heat to low and stir in Velveeta cubes. Stir in Rotel, chicken and spices.
Can be served once heated - if left simmering keep on low heat.
Cut tortillas into strips and deep-fry in 350º vegetable oil until golden brown.
Serve soup with shredded cheese and sour cream, and top with tortilla strips.
