2 c. cornmeal (I like yellow best)
1 tsp. salt
1 c. cold water
2 c.hot water

Directions:
Directions:
In the top pan of the double boiler put in the cornmeal and salt.
Stir in 1 cup of cold water mix well.
Add the 2 cups of hot water, stir until mixed well. Place this pan directly on burner and cook for 3 minutes stirring constantly until slightly thickened.
Put top pan over bottom pan which has boiling water already in it. Place the lid on and cook for 25 to 30 minutes.The mush will be thick so you will need to spoon it into the 8x8 pan and press into pan with the back of a spoon. If it sticks to your spoon wet the back of the spoon in the hot water of the boiler.
Let cool for a few hours or over night. Cut the thickness you like and place in hot oil. Fry to the crunchiness you prefer.
