1 can (14.75 oz.) salmon, pocked over to remove any bones
1 package (4oz.) smoked salmon
1 c. mashed potatoes
1/2 c. peas (thawed if frozen)
Zest of 1 lemon
1 tbsp. Dijon mustard
1 tbsp. hot sauce
1/4 tsp. ground black pepper
3 tbsp chopped fresh flat-leaf parsley
1 c. panko (Japanese-style) bread crumbs

Directions:
Directions:
1. Flake both salmons into a large bowl. Add the mashed potatoes, peas, lemon zest, mustard, hot sauce, pepper and parsley. Mix well, then use your hands to form into 8 patties.

2. Spread the bread crumbs on a plate. Set each patty into the crumbs. turning to coat both sides.

3. Coat a medium skillet with cooking spray and set it over medium heat. Add patties, 2 or 3 at a time, and cook for 4 minutes each side or until they are browned.
Serve with tartar sauce.
