3/4 cup (1 1/2 sticks/ 170 grams) unsalted butter, melted and cooled to the touch
1 cup (220 grams) tightly packed light brown sugar
¼ cup (80 grams) unsulphured dark molasses
1 egg
2 cups (280 grams) all purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon ground cloves
Granulated sugar for coating

Using a stand mixer fitted with a paddle attachment (or a handheld mixer or a wooden spoon), mix together the butter, brown sugar, molasses and egg on low speed for about 20 seconds or until well combined.

In a medium bowl, stir together the flour, baking soda, ginger, cinnamon, cloves and salt until well mixed. Add the flour mixture into the butter/sugar mixture and stir until totally incorporated.

For the best results, scrape the dough into an airtight container and let rest in the refrigerator overnight (or for at least 3 to 4 hours) before baking.


When you are ready to bake, preheat oven to 350 degrees and position rack in center of the oven.

Scoop out ¼ cup balls of dough and place them one by one in a bowl of sugar and gently toss to coat on all sides. Place the cookies on a cookie sheet about 2 inches apart and bake for 16-18 minutes until the cookies are crackly on top and just barely firm to the touch. Let cool on the baking sheet for 5 to 10 minutes, then transfer to a wire rack to cool completely.

Cookies may be stored for up to 3 days in an airtight container; the dough may be stored for up to a week in the refrigerator in an airtight container.
