2 c. grated potatoes, well drained after grating
(I use a blender on the grate setting)
1 tsp. salt
1/2 tsp. baking powder
3/4 c. flour (may add more if mixture looks too mushy)
1 egg

Directions:
Directions:
You can use whatever pork you like- pork chops, steak, or ribs. Add some water to keep them moist while baking. Bake at 325º until tender. Pour off juice and add to sauerkraut. (You can also add brown sugar and onion to your sauerkraut.) Bring to a boil and drop dumplings onto the juice and kraut. Make sure you have enough juice, you can also add water, because the dumplings absorb the juice as they cook. Turn heat to medium/low, cover and simmer 20-30 min.
