3 large garlic cloves or crushed garlic
1 1/2 tablespoons salt
1/2 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon ground thyme
1/2 teaspoon pepper
1 7-pound rib roast

If using fresh whole garlic, with machine running drop garlic through feed tube of processor until minced. Transfer contents to small bowl. Mix in salt, paprika, turmeric, thyme and pepper.

Wipe beef dry with paper towels. Rub all sides with oil. Rub garlic and salt mixture over the sides and top of beef. Place beef fat side up. Cover loosely with foil. Refrigerate overnight.

Start this part of the process approximately 4 hours prior to wanting to eat. Let the roast stand at room temperature for 1 hour. Preheat oven to 375º.

When cooking roast do not add water or cover. Cook 1 hour, never open the door. Turn off the oven and let roast sit in the cooling oven, threaten to cut off any fingers that open the oven door!

About 30 to 40 minutes before you want to eat, turn oven back on to 375º (30 minutes for pink or 40 minutes for more well done).
