1 cup shortening
3/4 cup packed brown sugar
3/4 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs
2 1/4 cup unbleached flour
1 teaspoon baking soda
1 teaspoon salt
3 to 4 cups semi-sweet chocolate chips

Directions:

Preheat oven to 375˚.

In large mixing bowl, cream shortening with sugars until smooth. Add vanilla with eggs then beat gently until thoroughly mixed. Add flour, baking soda and salt then gently folding until dry ingredients are absorbed Beat gently until thoroughly mixed. Add chocolate chips. Drop by rounded tablespoon onto an un-greased griddle. Bake for 8 to 9 minutes until barely turning a light golden brown around the edges. Remove from oven then leave on griddle for another 10 minutes which allows them to finish cooking. Remove onto wire rack to cool.

Variation: If you don’t have a griddle, you can use 2 nested baking sheets, but they won’t come out quite as soft. Bake for 9 to 10 minutes until golden brown around the edges. Baking sheets don’t hold as much heat as the griddle, so the cookies need to finish baking in the oven, rather than absorbing the griddle heat to finish cooking.

My chocolate chip cookies won the 3rd Place award in the Sonoma County Fair in Northern California durring the late 80’s. I don’t remember the year exactly, but it was the only year I submitted anything.
