MEATBALLS:
2 lb hamburger
1 medium onion, chopped
1 green pepper, chopped
salt/pepper
1 c. regular rice or 2 c. minute rice

ORIGINAL RED SAUCE:
2 cans tomato soup + 2 cans water OR 1 qt. tomato juice

WHITE GRAVY:
1 can mushroom soup
1/2 c water
1/2 c milk
3 T soy sauce
1 c sour cream

Directions:

Mix "MEATBALL" ingredients together and shape into small balls. Put into 9"x13" pan. Cover with either the red sauce or the white gravy. Bake at 350º for 1 1/2 hours or until rice is tender. Uncover the last 15 minutes or baking so some of the juice is absorbed.

I make big batches of these, shape and put on cookie sheets in the freezer. Then put them in ziplock bags. Thaw before adding the tomato juice or gravy and baking.

Since I always froze enough for at least 3 meals we were getting tired of having the 'same' thing so alternating with the white sauce feels like you are eating an entirely different meal. It's a great alternative to this great original recipe!

Quick tip: Mix your "Meatball" ingredients in your mixer with the bread arm and there is little to no work on your part!
