3 c. flour
2 c. sugar
1 c. coconut
2 1/2 tsp. soda
2 1/2 tsp. cinnamon
1 tsp. salt
2 c. shredded carrots
11 oz. can of mandarin oranges, undrained
1 1/4 c. canola oil
2 tsp. vanilla
1 tsp. orange peel
3 eggs
Frosting:
8 oz. pkg. cream cheese
2 tbsp. butter
1 tsp. vanilla
3 c. powered sugar
1/2 - 1 c. pecans or English walnuts (optional)

Directions:
Directions:
Preheat oven to 350ºF. Grease & flour 2 round cake pans or a 9 X 11 inch pan. Mix carrots, mandarin oranges (with juice) cooking oil, and eggs in blender. Blend well. Return to mixing bowl and add sugar, vanilla and dry ingredients. Mix well and pour into greased cake pans. Bake for 45-55 minutes if using 9 x 11 pan. Round pans bake about 25-30 minutes or until toothpick comes out clean. Don't over bake.This is a very moist cake. Cool cake and frost.
