2 lb. French green beans (haricots verts), trimmed
1/4 cup unsalted butter

2 Tbsp. olive oil
6 large shallots, cut into 1/3" chunks
Salt and pepper

Directions:
Heat 7 to 8-quart pot of salted water to boiling. Meanwhile, fill very large bowl with ice and water. Add beans to boiling water; cook 4 minutes. Drain beans and plunge into ice water to cool completely. Drain when cooled. (At this point, beans may be transferred to a storage bag and refrigerated up to one day.)

In the same pot, heat butter and oil on medium. Add shallots; cook 5 - 10 minutes until lightly browned, stirring occasionally. Drain beans and add to pot, along with 1 tsp. salt and 1 tsp. pepper. Cook until beans are heated through, stirring occasionally.
