1 lb. fresh cranberries
2 whole oranges
2 cups sugar
1 cup crushed pineapple
1 cup nuts, chopped
2 cups celery, diced
2 cups hot water
2 cups cold water
2 small pkgs jello (1 lemon and 1 cranberry)
1 envelope Knox gelatin

Directions:

In a food processor, grind cranberries and oranges (with peel - be sure to remove seeds and inner white pith) to a coarse mixture.
Combine cranberry mixture with 2 cups sugar and let stand overnight.
In the morning, mix 2 cups hot water, 2 pkgs jello and 1 small envelope Knox gelatin. Stir until dissolved and add 2 cups cold water. Into a large bowl combine jello mixture with all other ingredients, including cranberry mixture. Stir well to combine. Refrigerate until set.

This has been on our Thanksgiving table for as long as I can remember. Even the years my Grandma couldn't be with us, she would send her cranberry salad. It's one of my very favorites and I can eat it for days after Thanksgiving is over! The recipe seems complicated but it's well worth it!
