1 lb boneless, skinless chicken breast, cubed
2 c. brown rice
2 1/4 c water
6 tbsp butter or margarine
1 can cream of chicken soup
breadcrumbs
salt and pepper

Directions:
Directions:
After using a non-stick cooking spray, add rice and water to baking dish and mix well.
Place the tbsps of butter or margarine on the rice, with the tbsps spread out in the dish.
Add chicken cubes, spread out.
Cover all chicken cubes with a small amount of the soup.
Sprinkle bread crumbs all over the top.
Cover with foil and bake for one hour on 375º.
