1 lb ground beef
3/4 cup chopped onion
3/4 cup chopped carrots
3/4 cup chopped celery
3 cups chicken broth
4 cups chopped potatoes
3 Tbsp margarine
1/4 cup flour
2 cup Velveeta Cheese
1 1/2 cup milk
1 tsp salt and pepper (each)
1/2 tsp dried parsley
1/2 tsp dried basil
1/4 cup sour cream (I've never used this ingredient)

1. Brown meat and drain.
2. Saute onion, carrots and celery in 1 tsp margarine.
3. In a large pot put chicken broth, potatoes, meat, and sautéed vegetables. Bring to a boil. Simmer 10 - 15 minutes.
4. In a skillet, melt 3 Tbsp margarine. Add 1/4 cup flour and stir to make a paste. Add paste to soup. Reduce heat. Add 2 cups Velveeta, 1 1/2 cups milk and salt and pepper. Add parsley and basil and just before serving blend in 1/4 cup sour cream.

A friend of mine first gave me the recipe and accidently omitted the sour cream instructions. So, I've always made it minus the sour cream.
